Maria Lawton has shared the recipe she demonstrated at this year’s Viva Portugal festa. Enjoy!
Quick Stewed Beans with Portuguese Sausage
½ cup of Olive Oil
4 Tablespoons of butter (half a stick)
2 Small onions, finely chopped
1 lb of Portuguese sausage such as linguica or Chourico. Remove casing and cut into small rounds.
5-6 cloves of garlic, minced
¼ cup of tomato paste
3 cans (1lb,13oz) or 9 cups of cooked beans,* any type. Make sure to drain and rinse them before using.
Paprika to taste
Salt and pepper to taste
3 cups of liquid – water, chicken broth, or wine or a combination.
1/3 cup of chopped parsley
Grated Sao Jorge cheese, or any aged cheese of choice.
In a large skillet, heat the olive oil and butter over medium heat, add chopped onions and saute until translucent.
Add chopped sausage and sauté for 5 to 6 minutes.
Add garlic, stir and sauté together for another 2-3 minutes.
Reduce the heat to prevent garlic from burning,
Add tomato paste and then add beans, paprika and salt and pepper to taste.
Stir in your choice of liquid and bring to a low simmer.
Keep stirring until mixture beings to thicken, about 10 to 15 minutes.
Stir in chopped parsley
Grate cheese over top.
Note: if your skillet is oven-proof, you can also place the skillet in the oven and bake at 350 degrees for about 15 minutes until the top is toasted.
*Using dried beans instead of canned: After buying some dried beans, rinse and dump what you need for your recipe into a big bowl of cold water and let it sit overnight soaking. The next day, drain the water from beans. Add fresh water into a big pot and simmer until beans are tender. If you have extra, freeze excess and use in your next bean dish!
